Ingredients

  • tablespoon basil fresh minced
  • tablespoon basil fresh minced
  • small garlic clove minced
  • tablespoons goat cheese crumbled
  • tablespoons olive green minced pitted ( 8)
  • 0.1 teaspoon ground pepper red
  • inch bread crumbs italian
  • teaspoons juice of lemon fresh
  • teaspoons lemon zest grated
  • 0.3 cup olives minced pitted ripe ( 6)
  •  bell pepper red
  • 0.1 teaspoon salt

Directions

  1. Prepare broiler.
  2. Cut bell peppers in half lengthwise; discard seeds and membranes.
  3. Place pepper halves, skin sides up, on a foil-lined baking sheet; flatten with hand. Broil 15 minutes or until blackened.
  4. Place in a zip-top plastic bag; seal.
  5. Let stand for 10 minutes. Peel and cut into strips.
  6. Combine peppers and salt in a medium bowl; set aside.
  7. Place bread on a baking sheet; broil 1 minute on each side or until toasted.
  8. Combine ripe olives and the next 6 ingredients (through garlic) in a small bowl. Spoon about 1 tablespoon olive mixture onto each toast slice; top evenly with pepper strips, and sprinkle each serving with 1 1/2 teaspoons crumbled goat cheese.
  9. Cut each panino in half.
  10. Serve immediately.
