Ingredients

  • cup arugula coarsely chopped
  •  strips. with bones, skinned
  • 0.5  cinnamon sticks 
  • 0.5 cup feta cheese 
  • 0.3 cup basil fresh coarsely chopped
  • tablespoon thyme sprigs fresh chopped
  •  garlic clove chopped
  • tablespoons olive oil extra virgin extra-virgin
  • 12 ounces orecchiette ear-shaped (little pasta)
  • tablespoons parmesan cheese freshly grated
  • 0.5 teaspoon pepper dried red crushed
  • 3.5 cups canned tomatoes canned crushed (from two 28-ounce cans)

Directions

  1. Heat oil in heavy large pot over medium-high heat.
  2. Sprinkle duck with salt and pepper.
  3. Add duck to pot and sauté until brown, about 3 minutes per side.
  4. Transfer duck to plate.
  5. Add basil, garlic, thyme, cinnamon stick, and crushed red pepper to pot; sauté 3 minutes. Return duck to pot.
  6. Add tomatoes; bring to boil. Reduce heat to medium-low, cover, and simmer until duck is tender, about 1 hour.
  7. Remove cinnamon stick.
  8. Transfer duck to work surface.
  9. Cut all meat from bones; cut meat into strips. Return meat to pot. Season duck ragù to taste with salt and pepper. (Can be prepared 1 day ahead. Cool slightly. Chill uncovered until cold, then cover and keep chilled. Rewarm over medium heat before serving.)
  10. Cook orecchiette in large pot of boiling salted water until just tender but still firm to bite.
  11. Drain pasta. Return to pot.
  12. Add duck ragù, arugula, and Parmesan; toss to blend. Divide pasta among small bowls.
  13. Sprinkle with feta cheese.
