Ingredients

  • cups peaches organic pitted chopped
  • cups tomatoes organic ripe chopped
  • cup cucumber english organic chopped
  • medium shallots chopped
  • tablespoons olive oil extra virgin 
  • cups champagne vinegar 
  • handful basil organic
  • handful basil organic
  • teaspoon sea salt 
  • teaspoon pepper black
  • cup water filtered

Directions

  1. In a food processor, place all ingredients except the water and pulse until mixture is coarsely chopped.
  2. Add water and pulse a couple times again until the gazpacho is blended but still a little chunky.
