  • ounces cheddar cheese reduced-fat
  • cups rice long-grain cooked ( without salt or fat)
  •  egg white 
  • tablespoon flour all-purpose
  • tablespoon cilantro leaves fresh chopped
  • 0.3 cup parsley fresh divided minced
  • 0.5 cup green onions chopped
  • 0.5 teaspoon hot sauce 
  • 1.5 cups curd cottage cheese 1% low-fat
  • ounce carton nonfat yogurt plain
  • 0.1 teaspoon pepper 
  • 0.1 teaspoon salt

Directions

  1. Combine yogurt and flour in a large bowl; stir until smooth.
  2. Add cottage cheese and next 4 ingredients, stirring well. Stir in rice, Cheddar cheese, green onions, 3 tablespoons parsley, and cilantro.
  3. Spoon mixture into a 2-quart baking dish coated with cooking spray.
  4. Bake, uncovered, at 350 for 30 minutes or until thoroughly heated.
  5. Sprinkle with remaining 1 tablespoon parsley.
