Ingredients

  • 0.3 teaspoon double-acting baking powder 
  •  eggs beaten
  • 1.3 cups flour all-purpose
  • teaspoon juice of lemon 
  • 0.8 cup milk 
  • pound parsnips 
  • Dash salt 
  • 0.5 teaspoon sugar 
  • servings vegetable oil

Directions

  1. Soak parsnips in cold water 30 minutes.
  2. Drain; cut into 3- inch strips.
  3. Combine parsnips, lemon juice, and a small amount of boiling salted water in a medium saucepan. Cover, and cook 10 minutes or until parsnips are tender.
  4. Drain well.
  5. Combine flour, sugar, baking powder, and salt; stir well.
  6. Add milk and egg; beat until smooth.
