Wake up to a breakfast that perfectly balances rich, nutty flavor with the sweet, tropical sweetness of ripe bananas. These PB & Banana Pancakes are more than just a morning meal; they are a hearty, vegetarian feast designed to satisfy a crowd, easily feeding thirty people with a single batch. What makes this recipe truly special is its incredible efficiency, transforming fresh ingredients into golden, fluffy pancakes in just thirty minutes, making it the ultimate choice for busy brunches or large family gatherings.

The secret to these pancakes lies in the powerful combination of creamy peanut butter and fully mashed bananas. This duo creates a batter that is naturally moist and packed with protein, boasting an impressive nutritional profile where nearly half of the calories come from healthy fats, ensuring you stay energized well into the afternoon. The addition of Planters pecans provides a delightful crunch that contrasts beautifully with the soft interior of each pancake, while a hint of vanilla and a pinch of salt elevate the overall flavor profile to something truly gourmet.

Despite their decadent appearance, these pancakes remain surprisingly light, with a carbohydrate content that makes them a satisfying yet manageable start to the day. Whether you are hosting a morning meal for friends or preparing a quick brunch for the whole family, this recipe offers a delicious solution that requires minimal effort but delivers maximum reward. Simply mix the dry leavening agents with the wet ingredients, fold in the nuts, and watch as they transform into perfect, bubble-topped pancakes on your griddle. Serve them warm, generously topped with the remaining chopped pecans and a dollop of peanut butter, and you will have created a breakfast experience that everyone will be asking for again and again.
