Welcome to the delightful world of homemade Peanut Butter Sandwich Cookies, a classic dessert that promises to satisfy any sweet tooth while bringing joy to your table. These cookies are a perfect blend of nostalgic charm and modern convenience, offering a rich, nutty flavor that is both comforting and indulgent. With a preparation time of just 45 minutes and the ability to serve an impressive 60 people, this recipe is ideal for large gatherings, school events, or simply treating your family to a special afternoon snack. What makes these cookies truly special is their unique texture: the exterior is lightly crisp and golden, while the interior remains delightfully chewy, all thanks to the careful balance of ingredients and baking techniques.

Each cookie boasts a generous amount of creamy peanut butter, providing a robust flavor that pairs perfectly with the sweet, buttery shortening base. The inclusion of both white and brown sugars ensures a complex sweetness, while the addition of vanilla extract enhances the overall aroma, making your kitchen smell like a peanut butter factory. The secret to their success lies in the frosting, which transforms the individual cookies into luscious sandwiches. By mixing confectioners' sugar with more peanut butter, milk, and vanilla, you create a smooth, frosting-like consistency that clings beautifully to the warm cookies, sealing in those irresistible flavors.

At only 146 calories per serving, these treats offer a satisfying indulgence without feeling overly heavy, making them a guilt-free choice for dessert lovers. Whether you are a baking enthusiast looking to master the art of sandwich cookies or a host needing a reliable crowd-pleaser, this recipe delivers exceptional results every time. So, gather your ingredients, preheat your oven, and get ready to create a batch of cookies that will be remembered fondly for years to come.

Ingredients

  • teaspoons baking soda
  • cup brown sugar packed
  • cup butter shortening flavored
  • cups confectioners' sugar
  • 0.5 cup creamy peanut butter
  •  eggs
  • cups flour all-purpose
  • tablespoons milk
  • cup peanut butter
  • 0.3 teaspoon salt
  • teaspoon vanilla extract
  • cup sugar white

Equipment

  • bowl
  • baking sheet
  • oven
  • mixing bowl

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large mixing bowl, cream the shortening, 1 cup creamy peanut butter and white and brown sugars.
  3. Add vanilla and then eggs, one at a time. Beat well after each addition. In a small bowl, combine flour, baking soda and salt.
  4. Add slowly to creamy mixture.
  5. Shape into 1 inch balls and place on an ungreased cookie sheet, 2 inches apart. Flatten balls with a fork.
  6. Bake for 7-8 minutes depending on size (I tend to keep a close eye on them and remove them as soon as they start to get golden. This helps to make them chewy.) Cool on wire racks.
  7. Combine 1/2 cup creamy peanut butter, confectioners' sugar, vanilla extract, and milk in a small bowl adding enough milk to make for a creamy, frosting like texture.
  8. Spread frosting on one cookie and top off to make "sandwich".
