Ingredients

  • cups flour all-purpose
  • cups sugar 
  • teaspoons baking soda 
  • teaspoons ground cinnamon 
  • teaspoon salt 
  • 1.5 cups canola oil 
  • large eggs room temperature
  • jars carrots (4 ounces each )
  • ounces pineapple crushed drained canned
  • 0.5 cup walnut pieces chopped
  • ounces cream cheese softened
  • 0.5 cup butter softened
  • teaspoon vanilla extract 
  • 3.8 cups powdered sugar 
  • serving the petals from dandelion flowers chopped

Directions

  1. In a bowl, combine the dry ingredients.
  2. Add the oil, eggs and baby food; mix on low speed until well blended. Stir in pineapple and nuts.
  3. Pour into 2 greased and floured 9-in. round baking pans.
  4. Bake at 350° until a toothpick inserted in the center comes out clean, 35-40 minutes. Cool for 10 minutes before removing from pans to wire racks to cool completely.
  5. For frosting, in a bowl, beat cream cheese and butter until smooth. Beat in vanilla and confectioners' sugar until mixture reaches spreading consistency.
