Indulge in the rich flavors of Italy with our delightful Pollo alla Valdostana, a dish that beautifully marries tender chicken breasts with the savory goodness of prosciutto and the creamy allure of Fontina cheese. This recipe is not only quick to prepare, taking just 20 minutes, but it also serves as a perfect centerpiece for both lunch and dinner gatherings. With each bite, you'll experience the harmonious blend of textures and tastes that make this dish a true Italian classic.

The secret to this dish lies in the technique of pounding the chicken to an even thickness, ensuring that it cooks evenly and remains juicy. The addition of dry white wine elevates the sauce, infusing it with depth and character, while the prosciutto adds a delightful saltiness that complements the rich, melted Fontina cheese. Whether you're hosting a dinner party or simply treating yourself to a comforting meal, Pollo alla Valdostana is sure to impress.

Pair this delectable dish with a crisp northern Italian white wine, such as a 2005 Pinot Grigio from Alois Lageder, to enhance the dining experience. The sharp green pear and herbal notes of the wine will perfectly highlight the flavors of the chicken, making every bite a celebration of Italian culinary tradition. Get ready to savor a dish that is as satisfying as it is simple to prepare!

Ingredients

  • servings pepper black freshly ground
  • 0.3 cup wine dry white
  • 0.5 cup flour all-purpose
  • ounces fontina thinly sliced
  • servings kosher salt
  • ounces pancetta thinly sliced
  • 24 ounce chicken breast boneless skinless
  • tablespoons butter unsalted ()

Equipment

  • frying pan
  • baking paper
  • whisk
  • plastic wrap
  • wooden spoon
  • meat tenderizer

Directions

  1. Place 1 chicken breast between 2 sheets of plastic wrap or parchment paper and use a meat mallet or a frying pan to gently pound it to an even thickness, about 1/2 inch. Repeat with the remaining breasts.
  2. Place the flour in a wide, shallow dish, season generously with salt and pepper, and whisk to combine. Dredge each breast in the flour mixture and shake off any excess.Melt the butter in a large frying pan over medium heat. When it foams, add the chicken breasts and sauté until golden brown, about 4 minutes per side.
  3. Remove to a plate and set aside.
  4. Add the wine and scrape the bottom of the pan with a wooden spoon to incorporate any browned bits into the sauce.Return the chicken to the pan and reduce the heat to low. Divide the prosciutto among the chicken breasts, then divide the cheese. Cook, spooning sauce over the chicken to help melt the cheese, until the sauce has slightly thickened, about 3 minutes. (
  5. Add a few tablespoons of water if the sauce gets too thick.) Season with pepper and serve.Beverage pairing: Try a northern Italian white with this, something sharp and defined like the 2005 Pinot Grigio from the master of the Alto Adige, Alois Lageder. It has sharp green pear and herbal flavors that will highlight all the elements in this simple dish.
