Ingredients

  • 0.3 cup butter 
  • rib celery diced
  • 14.5 ounce chicken broth canned
  • pound rotini cooked
  • 0.3 teaspoon ground nutmeg 
  •  leek diced
  • cup parmesan cheese divided freshly grated
  • 0.5 teaspoon pepper 
  • pounds pumpkin peeled chopped
  • 0.5 teaspoon salt 
  • 0.7 cup whipping cream

Directions

  1. Toss 1/2 cup Parmesan cheese with pasta, and keep warm.
  2. Melt butter in a large saucepan over medium heat; add leek and celery, and saute until tender.
  3. Add pumpkin; saute 2 to 3 minutes.
  4. Add broth; bring to a boil. Cover, reduce heat, and simmer 20 minutes.
  5. Add salt, pepper, and nutmeg.
  6. Process pumpkin mixture in a blender until smooth. Return to saucepan; stir in whipping cream, and cook over low heat, stirring often, until heated.
