  • 0.3 cup brown sugar packed
  • 0.3 cup brown sugar packed
  • tablespoon butter cold
  • 0.5 cup pumpkin puree canned
  • 0.3 cup canola oil 
  • ounces cream cheese cut into 12 cubes
  •  eggs 
  • 1.8 cups flour all-purpose
  • teaspoon ground cinnamon 
  • 0.5 teaspoon nutmeg 
  • 0.5 cup milk 
  • 0.3 cup pecans chopped
  • 0.5 teaspoon salt 
  • 0.5 cup sugar

Directions

  1. In a bowl, combine the first six ingredients. In another bowl, beat the egg; add milk, pumpkin and oil. Stir into dry ingredients just until moistened. Fill 12 greased or paper-lined muffin cups half full.
  2. Place a cream cheese cube in the center of each. Top with remaining batter.
  3. For streusel, combine brown sugar, pecans and cinnamon in a small bowl.
  4. Cut in butter until crumbly.
  5. Sprinkle over batter.
  6. Bake at 400° for 18-22 minutes or until a toothpick inserted in the muffin comes out clean. Cool for 5 minutes before removing from pan to wire rack.
