  • 0.3 teaspoon pepper black freshly ground
  •  deep dish pie crust frozen
  • large egg whites lightly beaten
  • large eggs lightly beaten
  • 0.3 teaspoon nutmeg 
  • 0.8 cup gruyere cheese grated
  • 1.5 cups milk 2% reduced-fat
  • teaspoon olive oil 
  • cup onion halved thinly sliced
  • 0.5 teaspoon salt 
  •  bacon crumbled cooked

Directions

  1. Preheat oven to 37
  2. Pierce bottom and sides of pastry shell with a fork.
  3. Bake at 375 for 15 minutes.
  4. Let cool on a wire rack. Increase oven temperature to 45
  5. Heat a large nonstick skillet over medium-high heat.
  6. Add oil; swirl to coat.
  7. Add onion; saut 8 minutes or until tender, stirring occasionally.
  8. Remove from pan; let cool.
  9. Sprinkle onion, bacon, and cheese into pastry shell.
  10. Combine eggs and egg whites in a bowl, beating with a whisk.
  11. Add milk and remaining ingredients, beating with a whisk.
  12. Pour milk mixture over cheese mixture in pastry shell.
  13. Place quiche on a baking sheet.
  14. Bake at 450 for 10 minutes. Reduce oven temperature to 35
  15. Bake at 350 for 40 minutes, shielding edges after 15 minutes, if necessary, to prevent excess browning.
  16. Let cool on wire rack 15 minutes.
  17. Cut into wedges, and serve immediately.
