  • 0.5 lb asparagus fresh trimmed cut into 2-inch pieces thin
  • tablespoons butter 
  • 0.8 cup chicken broth (from 32-oz carton)
  • cloves garlic finely chopped
  • tablespoons spring onion chopped
  • teaspoons lemon zest grated
  • oz pasta uncooked
  • 0.3 teaspoon pepper 
  • 0.3 cup roasted peppers red drained finely chopped (from 7-oz jar)
  • 0.5 teaspoon salt 
  • 1.3 lb chicken breast boneless skinless cut into bite-size pieces

Directions

  1. Cook linguine as directed on package. Meanwhile, sprinkle chicken with salt and pepper. In 12-inch nonstick skillet, heat 1 tablespoon of the butter over medium-high heat until melted.
  2. Cook chicken in butter 5 to 7 minutes, stirring occasionally.
  3. Add onions, garlic, roasted peppers and asparagus; cook 2 to 3 minutes longer, stirring occasionally, until asparagus is crisp-tender and chicken is no longer pink in center. Stir in broth and remaining 1 tablespoon butter; cook until butter is melted.
  4. Drain linguine.
  5. Serve chicken mixture over linguine.
  6. Sprinkle lemon peel over each serving.
