  • teaspoon double-acting baking powder 
  • 0.3 cup butter 
  • cups coconut or shredded
  •  eggs 
  • cup flour all-purpose
  • tablespoon milk 
  • 0.5 cup raspberry jam 
  • 0.5 teaspoon vanilla extract 
  • 0.7 cup sugar white

Directions

  1. Preheat oven to 350 degrees F (180 degrees C). Greasea 8 inch square baking pan.
  2. In large bowl, mix together the flour and baking powder.
  3. Cut in 1/2 cup chilled butter cut into small pieces.
  4. Mix until coarse crumbs form. Stir in eggs, 1 at a time, into the flour mixture.
  5. Add the milk and stir til a soft dough forms.
  6. Spread dough in pan, pressing with fingers to cover bottom evenly.
  7. Spread the jam over top.
  8. Prepare topping, in a medium sized bowl.
  9. Mix together the sugar and 1/4 cup melted butter. Stir in coconut and vanilla.
  10. Spread on top of jam layer.
  11. Bake til topping is lightly browned, about 30 minutes. Cool completely.
  12. Cut into bars.
