  • 0.3 teaspoon pepper black
  • 0.3 cup couscous uncooked
  • large egg whites 
  • large eggs 
  •  garlic clove minced
  • 1.5 ounces monterrey jack cheese shredded
  • cup onion vertically sliced
  • 0.8 teaspoon salt 
  • 0.5 cup water 
  • tablespoon water

Directions

  1. Preheat oven to 35
  2. Bring 1/2 cup water to boil in a small saucepan; gradually stir in couscous.
  3. Remove from heat; cover and let stand 5 minutes. Fluff with a fork.
  4. Combine 1 tablespoon water, salt, black pepper, egg whites, and eggs in a medium bowl, stirring with a whisk.
  5. Heat a 10-inch ovenproof nonstick skillet coated with cooking spray over medium-high heat.
  6. Add bell pepper, onion, and garlic; saut 5 minutes. Stir in couscous and egg mixture; cook over medium heat 5 minutes or until almost set.
  7. Sprinkle with cheese.
  8. Bake at 350 for 10 minutes or until set.
  9. Let stand 5 minutes before serving.
