  • large eggs lightly beaten
  • 0.8 cup flour all-purpose
  • tablespoons granulated sugar 
  • teaspoon lemon zest grated
  • cup whole-milk ricotta 
  • 1.5 teaspoons vanilla extract pure
  • cups vegetable oil
