  • cups coconut or flaked

  • 2.5 cups flour all-purpose
  • cups rolled oats

  • teaspoon vanilla extract 
  • cup sugar white

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease baking sheets.
  2. Sift the flour, baking powder, baking soda and salt together into a bowl.
  3. Cream the butter and the sugar together. Beat in the egg and vanilla.
  4. Add the flour mixture and beat until smooth, about 2 minutes. Stir in the oats and flaked coconut.
  5. Shape dough into 1 inch balls and place on the prepared baking sheets.
  6. Bake at 350 degrees F (175 degrees C) for 12 to 15 minutes.
