  • 0.3 cup apricots dried chopped
  • ounces goat cheese crumbled
  • cups chicken broth low sodium
  • 0.5 cup niçoise olives pitted
  • 0.3 cup parsley leaves finely chopped
  • 0.3 cup raisins 
  • pinch saffron threads 
  • 0.5 teaspoon salt 
  • 0.5 cup slivered almonds toasted

Directions

  1. In a medium saucepan, bring broth, saffron, and salt to a boil.
  2. Remove from heat and stir in couscous. Cover and set aside for 5 minutes.
  3. Transfer cooked couscous to a medium bowl and fluff with a fork.
  4. Add remaining ingredients and toss to combine.
