Ingredients

  • 0.3 cup barbecue sauce 
  • cup buttermilk 
  • 0.3 cup eggs fat-free
  • clove garlic powder finely chopped
  • 0.3 cup bell pepper green finely chopped
  • slices bell pepper green thin
  • 0.5 teaspoon ground mustard 
  • 1.5 lb pd of ground turkey lean
  • 0.3 cup onion chopped
  • 0.3 teaspoon pepper 
  • 0.5 teaspoon salt 
  • slices sandwich bread white lightly toasted
  • tablespoon worcestershire sauce

Directions

  1. Heat oven to 350F. Into food processor or blender, tear toasted bread into pieces. Cover; process with on-and-off pulses until bread is crumbly and evenly chopped.
  2. In large bowl, mix bread crumbs and remaining ingredients except ketchup and bell pepper slices.
  3. Spread mixture in ungreased 8x4- or 9x5-inch loaf pan.
  4. Spread ketchup over top.
  5. Baked 1 hour to 1 hour 15 minutes or until meat thermometer inserted in center of loaf reads 165F.
  6. Let meatloaf stand 5 minutes; drain.
  7. Remove from pan. Top with bell pepper slices. To serve, cut meatloaf into 6 slices.
