  • 0.5  avocado diced pitted ripe peeled
  • large eggs 
  • 2-inch flour tortilla ( 7 1/es in diameter)
  • tablespoons cilantro leaves fresh chopped
  • tablespoons milk 
  • ounces monterrey jack cheese grated
  • servings salt and pepper black
  • tablespoons cream sour
  • tablespoons butter unsalted

Directions

  1. Preheat the oven to 350°F. Wrap the tortillasin foil and warm them in the oven.
  2. Whisk the eggs, milk, salt, pepper, and1 tablespoon of cilantro in a bowl. Meltbutter in a large nonstick skillet overmedium-low heat.
  3. Add eggs and cook,stirring, until just fi rm.
  4. Add avocado;cook until done (1 1/2 minutes total).
  5. Spoon eggs down center of each tortilla.Top with cheese and sour cream. Foldtortilla.
  6. Sprinkle with remaining cilantro.
