  • teaspoons dijon mustard divided
  • 1.5 ounces manchego cheese shredded
  • 1.5 tablespoons mayonnaise 
  • tablespoon olive oil 
  • ounces serrano ham paper-thin sliced
  • 0.3 cup shallots sliced
  • teaspoon sherry vinegar 
  • ounce sourdough bread toasted
