Ingredients

  • tablespoons butter room temperature ()
  • tablespoons capers drained finely chopped
  • 0.5 cup celery heart with leaves finely chopped
  • 0.3 teaspoon celery seeds 
  • tablespoon tarragon fresh chopped
  • 0.3 cup mayonnaise 
  • 0.3 teaspoon pepper sauce hot ()
  • 12 small sandwich rolls soft (3-inch round)
  • pound shrimp deveined cooked peeled
  • 1.5 tablespoons onion sweet grated (such as Vidalia or Maui)

Directions

  1. Mix first 5 ingredients and 1/4 teaspoon hot sauce in medium bowl.
  2. Mix in celery. Season with salt and pepper and more hot sauce, if desired. DO AHEAD Mayonnaise can be made 6 hours ahead. Cover; chill.
  3. Lightly butter cut sides of rolls.
  4. Heat griddle or large nonstick skillet over medium heat.
  5. Add rolls, buttered side down, to griddle and cook until golden, 1 to 2 minutes.
  6. Spread mayonnaise over bottom of each bun. Top with shrimp, tomato, avocado, and lettuce, if desired. Cover with top buns.
  7. Transfer to plates.
