Ingredients

  • tablespoons flour 
  • 0.5 teaspoon pepper black freshly ground
  • 45 ounce corn kernels divided drained canned
  • large eggs 
  • cup onion red chopped
  • teaspoon salt 
  • tablespoons sugar 
  • tablespoons butter unsalted divided melted for dish ()
  • 1.5 cups milk whole

Directions

  1. Preheat oven to 400°F. Butter 13 x 9 x 2-inchoval or rectangular baking dish.
  2. Heat 1tablespoon butter in heavy medium skilletover medium heat.
  3. Add onion and sautéuntil soft, about 5 minutes; cool in skillet.
  4. Whisk milk, eggs, flour, sugar, salt,pepper, and remaining 3 tablespoons butterin large bowl. Scrape in onion mixture.
  5. Add2 cans drained corn. Puree remaining 1 candrained corn in processor until smooth.
  6. Addpuree to bowl with custard mixture and stirto blend well; transfer to prepared dish.
  7. Bake pudding until set in centerand beginning to brown on top, 40 to 45minutes.
  8. Serve warm.
