  • tablespoon double-acting baking powder 
  • 0.3 teaspoon baking soda 
  • tablespoons butter 
  • 1.3 cups buttermilk whole
  • cup grain cornmeal whole yellow
  • large eggs lightly beaten
  • 0.5 teaspoon salt 
  • tablespoons sugar 
  • cup unbleached flour all-purpose
  • 0.3 cup vegetable oil

Directions

  1. Combine first 4 ingredients in a large bowl; make a well in center of mixture.
  2. Stir soda into buttermilk.
  3. Combine buttermilk mixture, egg, sugar, and oil; add to dry ingredients, stirring just until moistened.
  4. Place butter in a 9" or 10" cast-iron skillet coated with cooking spray.
  5. Place over medium-high heat until butter melts.
  6. Pour batter into prepared skillet.
  7. Bake at 375 for 25 to 30 minutes or until golden.
