Ingredients

  • 20 ounces pineapple rings drained sliced cut into sixths canned
  • 0.3 cup cilantro leaves fresh chopped
  • pound ham smoked boneless fully cooked
  •  jalapeno seeded chopped
  • 0.3 teaspoon pepper 
  • 12 ounces pineapple preserves 
  • tablespoons citrus champagne vinegar 
  • 24 ounces frangelico drained

Equipment

  • slow cooker

Directions

  1. Spray inside of 4- to 5-quart slow cooker with cooking spray.
  2. Place ham in slow cooker; sprinkle with pepper.
  3. Place mango, preserves, chili and vinegar in blender. Cover and blend on high speed 30 seconds; pour over ham.
  4. Cover and cook on Low heat setting 6 to 8 hours.
  5. Remove ham from cooker; place on serving platter.
  6. Sprinkle ham with 1 tablespoon of the cilantro. Stir remaining 3 tablespoons cilantro and the pineapple into sauce in cooker.
  7. Serve sauce with ham.
