Ingredients

  • 0.5 teaspoon pepper black freshly ground
  • pound button mushrooms 
  • ounces cheddar cheese smoked diced
  • 0.3 cup breadcrumbs dry
  • tablespoons parsley fresh chopped
  •  garlic clove minced
  • teaspoon olive oil 
  • 0.5 teaspoon salt 
  • 0.3 cup shallots minced ( 1 large)
  • teaspoon water

Directions

  1. Preheat oven to 40
  2. Heat a small nonstick skillet over medium-high heat. Coat pan with cooking spray.
  3. Add minced shallots and minced garlic; saut 2 minutes or until tender.
  4. Place shallot mixture in a medium bowl.
  5. Remove stems from mushrooms; chop stems.
  6. Add chopped mushroom stems, breadcrumbs, chopped parsley, salt, freshly ground black pepper, and smoked cheddar cheese to shallot mixture; toss with a fork until blended.
  7. Add olive oil and 1 teaspoon water; stir well to combine.
  8. Spoon about 1 teaspoon filling into each mushroom cap. Arrange mushrooms, filling side up, on a baking sheet.
  9. Bake at 400 for 20 minutes or until filling begins to brown and cheese melts.
  10. Serve warm.
