Ingredients

  • cup baby spinach loosely packed
  • tablespoons butter melted
  • lb skinned and boned chicken breasts 
  • tablespoons basil fresh chopped
  • 0.5 pound gouda cheese smoked sliced
  • 0.5 teaspoon lemon zest 
  • 0.5 cup mayonnaise 
  • 0.1 teaspoon pepper freshly ground
  • 0.5 teaspoon salt 
  • slices sourdough bread 
  • 0.3 cup sun-dried tomatoes thinly sliced

Directions

  1. Preheat grill to 350 to 400 (medium-high) heat.
  2. Sprinkle chicken with salt and pepper. Grill chicken, covered with grill lid, 7 to 10 minutes on each side or until done.
  3. Let stand 10 minutes, and cut into slices.
  4. Stir together mayonnaise and next 2 ingredients.
  5. Spread mixture on 1 side of each bread slice. Top 4 bread slices with chicken, Gouda, and next 2 ingredients. Top with remaining bread slices, mayonnaise mixture sides down.
  6. Brush sandwiches with melted butter.
  7. Cook sandwiches, in batches, in a preheated panini press 2 to 3 minutes or until golden brown.
