Ingredients

  • 0.3 teaspoon pepper black
  • cups egg noodles hot cooked uncooked ( 6 ounces noodles)
  • ounces crimini mushrooms sliced
  • 0.3 cup wine dry white
  • 0.3 cup fat-skimmed beef broth fat-free
  • cups leek chopped
  • cup cream sour low-fat
  • teaspoon olive oil 
  • 0.3 teaspoon salt 
  • tablespoon cooking sherry 
  • ounces mushroom caps thinly sliced
  • 16 ounce chicken breast halves

Directions

  1. Heat olive oil in a large nonstick skillet over medium-high heat.
  2. Sprinkle chicken with 1/4 teaspoon pepper.
  3. Add chicken to pan, and saut 6 minutes on each side.
  4. Remove from pan, and keep warm.
  5. Add mushrooms and leeks to pan; saut 8 minutes. Return chicken to pan.
  6. Add wine, broth, sherry, and salt; cook 2 minutes or until chicken is done.
  7. Remove from heat; stir in sour cream.
  8. Serve over noodles; garnish with freshly ground black pepper and parsley, if desired.
