  • cups extra wide egg noodles hot cooked uncooked ( 3 ounces noodles)
  • ounces cremini mushrooms sliced
  • 0.3 cup cooking wine dry white
  • 0.3 cup less-sodium chicken broth fat-free
  • cups leek chopped
  • cup cup heavy whipping cream sour reduced-fat
  • teaspoon olive oil 
  • 0.3 teaspoon pepper 
  • 0.3 teaspoon salt 
  • tablespoon cooking sherry 
  • ounces shiitake mushroom caps thinly sliced
  • 16 ounce chicken breast halves boneless skinless

Directions

  1. Heat olive oil in a large nonstick skillet over medium-high heat.
  2. Sprinkle chicken evenly with pepper.
  3. Add chicken to pan, and cook 6 minutes on each side.
  4. Remove from pan, and keep warm.
  5. Add mushrooms and leek to pan; saut 8 minutes. Return chicken to pan.
  6. Add wine, broth, sherry, and salt; cook 2 minutes or until chicken is done.
  7. Remove from heat; stir in sour cream.
  8. Serve over noodles.
  9. Garnish with parsley, if desired.
