  • cup bell pepper strips yellow
  • tablespoon chiles green canned chopped
  • 0.5 teaspoon chili powder 
  • 6-inch flour tortillas ()
  • tablespoon cilantro leaves fresh chopped
  • tablespoons cilantro leaves fresh chopped
  •  garlic clove minced
  • 0.3 cup green onions chopped
  • 0.5 teaspoon ground cumin 
  • tablespoon juice of lemon 
  • 11 ounce mandarin oranges in syrup light drained canned
  • ounces monterrey jack cheese shredded reduced-fat
  • ounce pineapple tidbits in juice drained canned
  • cup onion red vertically sliced
  • 1.5 pounds shrimp deveined peeled
  • cup tomatoes chopped

Directions

  1. To prepare the salsa, combine the first 6 ingredients in a bowl. Cover and chill.
  2. To prepare tacos, place a large nonstick skillet coated with cooking spray over medium-high heat until hot.
  3. Add bell pepper, onion, and garlic; saut 2 minutes.
  4. Add shrimp, tomato, cumin, and chili powder; saut 3 minutes or until shrimp are done. Stir in cilantro. Spoon 1/2 cup shrimp mixture over one half of each tortilla, and top with about 3 tablespoons cheese and 2 tablespoons salsa; fold tortillas in half.
