  • 1.5 tsp calumet baking powder 
  • cups cornmeal 
  •  eggs 
  • 0.5 cup flour 
  • 0.5 tsp ground pepper red (cayenne)
  • 0.5 cup milk 
  • cup miracle whip dressing 
  • 0.3 cup onions chopped
  • 0.3 cup bell peppers green red chopped
  • 8.8 oz kernel corn whole drained well canned

Directions

  1. Preheat oven to 400F.
  2. Mix cornmeal, flour, baking powder and ground red pepper in large bowl; set aside. Beat eggs, dressing and milk with wire whisk until well blended.
  3. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in remaining ingredients.
  4. Spoon batter into 12 greased or paper-lined medium muffin cups.
  5. Bake 20 min. or until lightly browned around edges.
