  • 0.5 teaspoon double-acting baking powder 
  • cup butter cold cubed
  •  egg yolk 
  • cups flour all-purpose
  • 0.3 teaspoon ground cinnamon 
  • 58 ounces peaches peeled drained sliced canned
  • 0.3 teaspoon salt 
  • 16 ounces cream sour
  • tablespoons sugar

Directions

  1. In a large bowl, combine the flour, 1/4 cup sugar, baking powder and salt; cut in butter until mixture resembles coarse crumbs. Press onto the bottom and 1 in. up the sides of a greased 13-in. x 9-in. baking dish.
  2. Arrange peaches over crust.
  3. Combine cinnamon and remaining sugar; sprinkle over peaches.
  4. Bake at 400° for 15 minutes.
  5. Meanwhile, in a small bowl, combine egg yolks and sour cream.
  6. Spread evenly over peaches.
  7. Combine sugar and cinnamon; sprinkle over top.
  8. Bake 30-35 minutes longer or until set.
  9. Serve warm or cold. Store leftovers in the refrigerator.
