  • 0.5 teaspoon baking soda 
  • 0.3 cup canola oil 
  • cup cornmeal 
  •  eggs 
  •  egg whites 
  • 0.8 cup skim milk fat-free
  • cup flour all-purpose
  • ounces to 2 chilies slit green chopped canned
  • ounces cheddar cheese shredded reduced-fat
  • 0.5 teaspoon salt 
  • 15 ounces corn whole drained canned

Directions

  1. Place corn in a food processor or blender; cover and process until coarsely chopped. Set aside. In a bowl, combine the flour, cornmeal, baking soda and salt.
  2. In a small bowl, combine the egg, egg whites, milk and oil. Stir into dry ingredients just until moistened.
  3. Add the cheese, chilies and corn.
  4. Pour into a 9-in. square baking dish coated with cooking spray.
  5. Bake at 350° for 40-45 minutes or until a toothpick inserted near the center comes out clean.
  6. Serve warm.
