  • 0.5 cup cilantro leaves fresh finely chopped
  • cup regular corn frozen
  • tablespoons catsup 
  • pounds ground beef lean (90 percent )
  • tablespoon olive oil 
  • small onion finely chopped
  • 0.5 teaspoon pepper 
  • cup yogurt plain (not nonfat)
  • 0.5  bell pepper red stemmed seeded finely chopped
  • 1.5 teaspoons salt

Directions

  1. Preheat oven to 375F. Line a baking sheet with heavy-duty foil.
  2. Warm oil in a skillet over medium-high heat.
  3. Add onion and bell pepper and cook, stirring, until softened, about 5 minutes. Stir in corn; saut 2 minutes.
  4. Transfer to a large bowl to let cool slightly.
  5. Add beef, bread crumbs, egg, yogurt, cilantro, chili powder, cumin, salt and pepper to bowl.
  6. Mix gently until well combined; do not overmix.
  7. Transfer to baking sheet and shape into a 12-by-4-inch loaf.
  8. Bake until an instant-read thermometer inserted into center registers 160F, about 1 hour.
  9. Spread with ketchup, if desired, and let stand 10 minutes before slicing and serving.
