Ingredients

  • lb shrimp with tail shells left on), deveined uncooked peeled
  • serving salt and pepper to taste
  • tablespoons olive oil 
  • tablespoons butter 
  • cloves garlic chopped
  • 0.5 cup wine 
  • 14.5 oz canned tomatoes diced organic undrained canned
  •  pepper red crushed seeded chopped
  •  juice of lemon 
  • tablespoons parsley fresh chopped
  • tablespoon basil fresh chopped
  • 0.3 cup panko bread crumbs crispy italian
  • serving rice cooked

Directions

  1. Place shrimp in large bowl; season well with salt and pepper. Set aside.
  2. In 12-inch skillet, heat oil and butter over medium-high heat until butter is melted.
  3. Add garlic; cook and stir 2 to 3 minutes.
  4. Add wine; cook 1 to 2 minutes. Stir in tomatoes and chile. Season with salt and pepper. Reduce heat; simmer 2 to 3 minutes.
  5. Add shrimp to skillet; cook 2 to 3 minutes, stirring occasionally, until shrimp are pink. Gently stir in lemon juice, parsley and basil.
  6. Sprinkle with bread crumbs.
  7. Serve immediately over rice.
