  • ounces gouda cheese smoked grated
  • 0.5 cup green onions thinly sliced
  • cup milk 1% low-fat
  • tablespoons milk 1% low-fat
  • Dash nutmeg grated
  • tablespoon olive oil extra-virgin
  • 0.3 teaspoon salt 
  • 0.8 teaspoon salt

Directions

  1. To prepare crust, place butter in a large bowl; beat with a mixer at medium speed until light and fluffy.
  2. Combine milk, salt, and egg yolk in a small bowl; stir well with a whisk.
  3. Add milk mixture to butter, 1 tablespoon at a time, beating well after each addition.
  4. Add flour; beat just until combined. Press mixture into a 4-inch circle on plastic wrap; cover. Chill for 1 hour.
  5. Preheat oven to 35
  6. Unwrap and place chilled dough on a lightly floured surface.
  7. Roll dough into a 10-inch circle. Fit dough into a 9-inch pie plate. Freeze 15 minutes.
  8. Bake at 350 for 25 minutes or until lightly browned. Cool.
  9. To prepare filling, heat oil in a large skillet over medium-high heat.
  10. Add onions; saut 5 minutes or until tender.
  11. Add spinach; saut 2 minutes.
  12. Combine 1 cup milk and remaining ingredients in a bowl; stir well with a whisk. Stir in spinach mixture.
  13. Pour filling into crust.
  14. Bake at 350 for 35 minutes.
  15. Cut into 10 wedges.
