Ingredients

  • 0.3 teaspoon pepper black freshly ground
  • ounces feta cheese crumbled
  • cup corn kernels fresh ( 2 ears)
  • 0.3 cup flat-leaf parsley fresh chopped
  •  garlic clove minced
  • 0.5 cup green onions chopped
  • 20  kalamata olives pitted coarsely chopped
  • tablespoons juice of lemon fresh
  • tablespoons olive oil 
  • 1.5 cups pearl barley uncooked
  • cup plum tomatoes diced seeded ( 2 small)
  • 0.3 teaspoon salt

Directions

  1. Cook barley according to package directions, omitting salt.
  2. Drain and rinse with cold water; drain. Cool completely.
  3. Combine barley, corn, and next 4 ingredients (through kalamata olives) in a bowl.
  4. Combine juice and next 4 ingredients (through garlic), stirring well with a whisk; drizzle over barley mixture. Toss to coat.
  5. Sprinkle with cheese.
