Ingredients
- 0.3 teaspoon pepper black freshly ground
- 3 ounces feta cheese crumbled
- 1 cup corn kernels fresh ( 2 ears)
- 0.3 cup flat-leaf parsley fresh chopped
- 1 garlic clove minced
- 0.5 cup green onions chopped
- 20 kalamata olives pitted coarsely chopped
- 3 tablespoons juice of lemon fresh
- 2 tablespoons olive oil
- 1.5 cups pearl barley uncooked
- 1 cup plum tomatoes diced seeded ( 2 small)
- 0.3 teaspoon salt

Directions
- Cook barley according to package directions, omitting salt.
- Drain and rinse with cold water; drain. Cool completely.
- Combine barley, corn, and next 4 ingredients (through kalamata olives) in a bowl.
- Combine juice and next 4 ingredients (through garlic), stirring well with a whisk; drizzle over barley mixture. Toss to coat.
- Sprinkle with cheese.
