  • 0.5 cup bread crumbs 
  • 0.3 cup butter 
  •  eggs 
  • 0.3 cup bell pepper green chopped
  • 0.5 cup mayonnaise 
  • 0.5 cup onion chopped
  • 0.5 cup pecans chopped
  • 10 servings salt and pepper to taste
  • 0.5 cup cheddar cheese shredded
  • pound summer squash sliced
  • tablespoon sugar white

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Bring a large pot of water to boil.
  3. Add squash, and cook until tender.
  4. Drain well.
  5. Place squash in a large mixing bowl.
  6. Add butter, reserving 1/2 tablespoon, to the squash and mash well.
  7. Mix bell pepper, sugar, onion, egg, mayonnaise, salt and pepper, cheese and nuts to the mixture.
  8. Transfer the mixture to a 1-quart casserole dish. Top with bread crumbs. Dot with the reserved butter.
  9. Bake at 350 degrees F (175 degrees C) for 35 to 40 minutes.
