Ingredients

  • 0.5 cup butter softened ()
  • 16 servings butter for greasing pans
  • ounce strained carrot baby food 
  • 16 ounce confectioners' sugar 
  • ounce cream cheese softened
  •  eggs 
  • cups granulated sugar 
  • teaspoons ground cinnamon 
  • cups self-rising flour 
  • teaspoon vanilla extract pure
  • 1.5 cups vegetable oil

Directions

  1. Preheat oven to 325 degrees F. Grease and flour 3 (8 or 9-inch) cake pans.
  2. Mix together the flour, cinnamon and sugar in a large bowl.
  3. Add the remaining ingredients and blend well with a handheld electric mixer for about 2 minutes.
  4. Pour batter into prepared pans.
  5. Bake for 25 to 30 minutes, or until golden brown. Allow to cool in pan for 5 minutes. Invert onto lint-free dishcloth, or waxed paper, and allow to cool completely.
  6. Mix all ingredients with handheld electric mixer and blend until smooth and creamy.
  7. Frost layers, top, and sides of cooled cake.
