Tea-and-Honey Crisps are a delightful dessert that brings together the delicate flavors of Earl Grey tea and the natural sweetness of honey in a light, crispy cookie. Perfect for vegetarians and those looking for a sophisticated treat, these cookies offer a unique twist on traditional crisps by infusing subtle tea notes that elevate each bite. Their modest calorie count of just 28 kcal per serving makes them a guilt-free indulgence you can enjoy any time.

The preparation might take some time, about 300 minutes, but the result is truly worth the wait. The process involves carefully blending softened butter, confectioners sugar, honey, and finely crushed decaffeinated Earl Grey tea leaves to create a fragrant batter. Adding egg whites and flour gently ensures the right delicate texture, while the artful use of stencils helps you craft beautifully shaped cookies that impress both in appearance and taste.

These crisps bake quickly at 350°F, developing golden edges that offer a satisfying crunch. For an extra touch, you can even curl them over wooden spoons or rolling pins for an elegant presentation. Thanks to their subtle tea infusion and honey sweetness, these crisps pair wonderfully with your favorite cup of tea or coffee, making them an ideal choice for hosting or gifting. Plus, they stay fresh up to a week when stored properly, allowing you to savor their charm over time.

Whether you're a tea lover or simply looking for a refined dessert to impress guests, Tea-and-Honey Crisps are a splendid recipe to add to your baking repertoire. Their unique flavor combination and visually appealing shapes ensure that every bite is both fun and flavorful.

Ingredients

  • cup confectioners sugar
  • large egg whites
  • cup flour all-purpose
  • 0.3 cup mild honey
  • 2.3 teaspoons decaffeinated earl grey tea leaves (from 2 to 3 tea bags)
  • 0.5 cup butter unsalted softened

Equipment

  • bowl
  • baking sheet
  • oven
  • knife
  • hand mixer
  • wooden spoon
  • spatula
  • rolling pin

Directions

  1. Draw desired shape of cookie on a Styrofoam plate, then cut out shape with X-Acto knife and discard shape. If desired, cut out additional shapes from same plate. Trim plate, leaving a 1-inch border around stencil(s). Make more stencils with more plates if desired.
  2. Put oven rack in middle position and preheat oven to 350°F. Line a large baking sheet with nonstick liner.
  3. Beat together butter, confectioners sugar, honey, and tea leaves in a large bowl with an electric mixer at medium speed until combined well.
  4. Add egg whites 1 at a time, beating well after each addition. Reduce speed to low, then mix in flour until just combined.
  5. Place stencil on liner and spread batter with spatula over stencil to completely cover opening. Carefully lift stencil from liner and stencil more cookies in same manner about 1 inch apart.
  6. Bake until edges are deep golden brown, 6 to 9 minutes. Cool cookies 1 minute on sheet, then transfer with spatula to a rack to cool completely. (To curl cookies, drape while hot over handles of wooden spoons or rolling pins to cool.) Stencil and bake more cookies with remaining batter.
  7. •If using loose tea, finely crush before measuring.•Cookies keep in an airtight container at room temperature 1 week.
