Ingredients

  • lb ground beef lean
  • 1.3 cups potatoes peeled finely chopped
  • 0.5 cup onion chopped (1 medium)
  •  jalapeno fresh canned seeded chopped
  • 15 oz chili beans sauce undrained canned
  • 0.3 teaspoon salt 
  • 0.1 teaspoon pepper 
  • 10 10-inch flour tortilla ()
  • 1.5 cups cheddar cheese shredded
  • serving salsa thick
  • serving cream sour

Directions

  1. Heat oven to 350°F. Lightly grease 13x-9-inch pan. In large skillet, cook ground beef, potatoes, onion and chiles over medium-high heat for 5 to 7 minutes or until beef is thoroughly cooked and vegetables are tender, stirring frequently.
  2. Drain.
  3. Add beans, salt and pepper; mix well. Bring to a boil. Reduce heat; simmer 5 minutes, stirring frequently.
  4. Spoon 1/2 cup beef mixture in center of each tortilla.
  5. Sprinkle each with heaping 2 tablespoons cheese.
  6. Roll up each tortilla, enclosing filling; fold ends under.
  7. Place seam side down in greased pan; cover with foil.
  8. Bake at 350°F. for 10 to 12 minutes or until thoroughly heated.
  9. Serve burritos with salsa and sour cream.
