  • 0.8 cup coconut or flaked
  • 0.8 cup virgin coconut oil 
  •  eggs 
  • 1.3 cups flour all-purpose
  • 0.3 cup grapeseed oil 
  • tablespoons ground flaxseed 
  • 0.3 cup juice of lime fresh
  •  lime zest 
  • cup milk 
  • 1.3 cups sugar raw
  • 0.5 teaspoon salt 
  • 1.5 cups flour whole wheat

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease 10 Texas-size muffin cups or line with paper muffin liners.
  2. Whisk sugar, coconut oil, and grapeseed oil together in a bowl.
  3. Add eggs and lime zest; whisk until smooth.
  4. Whisk whole wheat flour, all-purpose flour, flaked coconut, flaxseed, baking powder, and salt together in a bowl. Stir milk and lime juice together in another bowl.
