  • 0.3 pound capicola hot thinly sliced
  • small carrots shredded peeled
  • tablespoons olive oil extra virgin plus more for drizzling)
  • pound mozzarella fresh drained thinly sliced
  • medium clove garlic grated
  • 0.5 cup olive green pitted finely chopped
  • 0.5 cup kalamata olives pitted finely chopped
  • servings pepper black freshly ground
  • 0.5 pound mortadella thinly sliced
  • tablespoons red wine vinegar 
  • 0.3 cup roasted peppers red drained finely chopped
  •  ciabatta bread ciabatta-style sliced in half

Directions

  1. Combine carrots, olives, peppers, garlic, vinegar, and olive oil in a medium bowl. Season to taste with salt and pepper. Open ciabatti and place cut-side up on a cutting board.
  2. Spread 1/3 of mixture evenly over bottom half of each loaf of ciabatta. Divide remaining mixture evenly over top half of each loaf. Arrange mortadella evenly over bottom halves, then layer on finocchiona, capicola, and mozzarella.
  3. Drizzle with more olive oil. Close sandwiches, cut as desired, and serve.
