Ingredients

  • cloves garlic finely chopped
  •  grape tomatoes assorted halved lengthwise
  • tablespoons herbs like: thym fresh assorted
  • tablespoon olive oil 
  • cup part-skim ricotta 
  • 0.1 teaspoon pepper 
  • pound pizza dough at room temperature
  • 0.3 teaspoon salt 
  • large tomato

Directions

  1. Adjust oven rack to bottom position; preheat to 450F. Mist a large baking sheet or 12-inch pizza pan with cooking spray.
  2. Roll out dough on a lightly floured surface to a rough 12-inch circle.
  3. Transfer to sheet.
  4. Brush crust with 1/2 Tbsp. olive oil.
  5. Bake until cooked through, about 15 minutes.
  6. Spread ricotta all over, leaving a 1/2-inch border.
  7. Place large tomato slices on top, then scatter cherry tomatoes over.
  8. Sprinkle with garlic, salt and pepper.
  9. Bake until tomatoes have softened and cheese begins to brown around edges, about 10 minutes.
  10. Remove from oven, sprinkle with herbs and drizzle with remaining 1/2 Tbsp. oil.
