Ingredients

  • 29 ounce tomatoes diced with basil, garlic, and oregano (such as hunt's) canned
  • 0.8 cup celery chopped ( 3 stalks)
  • tablespoon garlic minced
  • 1.3 pounds turkey sausage italian hot
  • ounce pre- mushrooms 
  • 1.5 cups onion chopped ( 1 large)
  • ounces part-skim mozzarella cheese shredded
  • 3.5 cups penne pasta uncooked
  • ounce pimientos diced drained

Directions

  1. Cook pasta according to package directions, omitting salt and fat.
  2. Preheat oven to 40
  3. Cook sausage in a large nonstick skillet over medium-high heat until browned, stirring to crumble.
  4. Add onion, mushrooms, and celery; cook 6 to 8 minutes or until tender.
  5. Add tomatoes, pimiento, and garlic. Bring to a boil; reduce heat, and simmer, uncovered, 8 to 10 minutes or until almost all liquid has evaporated.
  6. Combine sausage mixture and hot cooked pasta in a large bowl, mixing well.
  7. Pour into a 13 x 9-inch baking dish coated with cooking spray.
  8. Sprinkle with cheese.
  9. Bake, uncovered, at 400 for 15 minutes or until cheese melts.
