  • 0.5 teaspoon pepper black
  • tablespoon canola oil 
  • cup chicken stock see unsalted (such as Swanson)
  • 0.3 cup flour all-purpose
  • tablespoon garlic minced
  • ounce turkey sausage italian hot
  • 0.3 teaspoon kosher salt 
  • cup milk 1% low-fat
  •  no boil lasagna noodles 
  • ounce parmesan fresh grated
  • ounce part-skim mozzarella cheese shredded
  • 1.5 cups part-skim ricotta 
  • 0.5 cup shallots chopped
  • 12 ounce pkt spinach fresh
  • tablespoons water

Directions

  1. Preheat oven to 37
  2. Weigh or lightly spoon flour into a dry measuring cup; level with a knife.
  3. Combine flour and next 4 ingredients (through bay leaf) in a medium saucepan over medium heat, stirring with a whisk. Cook 8 minutes or until thick and bubbly, stirring frequently.
  4. Remove from heat; stir in salt and pepper.
  5. Spread 1 cup milk mixture in bottom of an 11 x 7-inch glass or ceramic baking dish coated with cooking spray.
  6. Heat a large skillet over medium heat.
  7. Add 2 tablespoons water and spinach to pan; cook 2 minutes or until spinach wilts.
  8. Drain spinach, pressing until barely moist. Increase heat to medium-high.
  9. Remove casings from sausage.
  10. Add sausage to pan; cook 4 minutes or until browned, stirring to crumble.
  11. Remove sausage from pan.
  12. Add shallots and garlic to pan; saut 2 minutes. Stir in remaining milk mixture, spinach, and cooked sausage.
  13. Remove pan from heat.
  14. Arrange 2 noodles over milk mixture in baking dish; top with 1/2 cup ricotta and one-third spinach mixture. Repeat layers twice.
  15. Sprinkle with mozzarella and Parmesan cheese. Cover with foil coated with cooking spray.
  16. Bake at 375 for 40 minutes.
  17. Remove foil.
  18. Preheat broiler to high.
  19. Broil 4 minutes or until cheese is golden brown.
  20. Let stand 10 minutes.
