Ingredients

  • 0.3 cup butter 
  • cup carrots thinly sliced
  • cup celery thinly sliced
  • cups chicken broth 
  • teaspoon curry powder 
  • tablespoons flour all-purpose
  • tablespoons parsley fresh minced
  • 12 oz pkt spinach frozen
  • 1.5 cups half-and-half 
  •  onions chopped
  •  potatoes chopped
  • 0.5 teaspoon poultry seasoning dried
  • cups turkey cubed cooked

Directions

  1. Melt butter in pan.
  2. Add onions and saut for 10 minutes. Stir in flour and curry powder; cook for 2 minutes.
  3. Add broth, potatoes, carrots, celery, parsley and sage. Reduce heat to low; cover and simmer 10 to 15 minutes.
  4. Add turkey, half-and-half and frozen spinach. Cover and simmer, stirring occasionally until heated through, about 10 minutes.
