Ingredients

  • 0.3 teaspoon pepper black freshly ground
  • teaspoons butter melted
  • ounces bread french
  • tablespoons parsley fresh chopped
  •  garlic clove 
  • pint grape tomatoes 
  • teaspoon olive oil 
  • pint pear tomatoes yellow
  • 0.5 teaspoon salt 
  • 0.3 cup shallots finely chopped

Directions

  1. Preheat oven to 42
  2. With food processor on, drop garlic through food chute; process until finely chopped.
  3. Add bread; pulse until coarse crumbs measure 1 3/4 cups.
  4. Drizzle breadcrumbs with butter; pulse to combine.
  5. Heat oil in a medium ovenproof skillet over medium-high heat.
  6. Add shallots; saut 3 minutes or until tender.
  7. Add tomatoes, salt, and pepper; saut 1 1/2 minutes or just until heated. Stir in parsley.
  8. Sprinkle evenly with breadcrumb mixture. Lightly coat with cooking spray.
  9. Bake at 425 for 7 minutes or until golden brown.
  10. Let stand 5 minutes before serving.
