  • ounce baby spinach 
  •  ciabatta rolls halved
  • ounces fontina shredded divided
  •  garlic cloves pressed
  • tablespoons olive oil extra-virgin divided plus more for drizzling
  • cups roast chicken shredded
  • tablespoons shallots chopped
  • 12 ounces mushrooms white sliced
  • servings grain mustard whole

Directions

  1. Preheat oven to 400°F. Pull some breadfrom ciabatta rolls to form slightly hollowcenters.
  2. Drizzle ciabatta rolls with oliveoil.
  3. Spread roll bottoms with whole grainmustard.
  4. Sprinkle roll bottoms with halfof Fontina cheese.
  5. Heat 2 tablespoons oil in large skilletover medium-high heat.
  6. Add mushrooms;sauté 4 minutes.
  7. Add chopped shallotsand pressed garlic; sauté 3 minutes.
  8. Addchicken; sauté 2 minutes to heat through.
  9. Transfer to plate.
  10. Add 1 tablespoon oilto skillet.
  11. Add spinach; sauté 2 minutes.Season to taste with salt and pepper.
  12. Drain.Spoon chicken mixture, then spinach overroll bottoms. Top with remaining cheese.Cover with roll tops. Wrap each sandwichtightly in foil.
  13. Bake sandwiches untilcheese melts, about 20 minutes.
