There is something undeniably comforting about a bowl of homemade yeast dumplings, a dish that perfectly balances the warmth of a rich broth with the soft, pillowy texture of freshly kneaded dough. While traditionally associated with savory meat stocks, this vegetarian-friendly twist proves that you can create a deeply satisfying meal using a savory chicken broth base without compromising on flavor or heartiness. What makes this recipe particularly delightful is the artful integration of rich, melted butter and a hint of sweetness from the sugar, which elevates the dough beyond a simple starch into a luxurious side dish that feels almost indulgent.

At just 50 minutes from start to finish, this dish is the perfect solution for a weeknight dinner or a cozy gathering where you want to impress guests without spending hours in the kitchen. The process itself is a delightful ritual, beginning with the gentle simmering of milk and butter to create a fragrant base for the yeast, followed by the satisfying tactile experience of kneading the dough until it achieves a smooth, satiny finish. Watching these dumplings initially sink in the boiling broth before proudly rising to the surface is a visual delight that signals they are perfectly cooked, offering a burst of tender, fluffy goodness with every bite.

With a balanced nutritional profile providing substantial energy and a satisfying mix of protein, healthy fats, and carbohydrates, these dumplings are not only delicious but also nourishing. Whether served as a hearty side to accompany a main course or enjoyed on their own as a comforting meal, this recipe captures the essence of home cooking. The combination of eggs, flour, and aromatic broth creates a symphony of flavors that warms the soul, making it a standout choice for anyone who appreciates the simple joy of crafting something special from scratch.

Ingredients

  • 0.3 ounce active yeast dry
  • 0.5 cup butter
  • 32 ounce carton chicken broth
  •  eggs
  • 4.5 cups flour all-purpose
  • 0.5 cup milk
  • teaspoon salt
  • 0.5 cup sugar
  • 0.5 cup water

Equipment

  • bowl
  • sauce pan
  • mixing bowl
  • pot
  • slotted spoon
  • butter knife

Directions

  1. Place milk and butter in a small saucepan, and simmer over medium heat until butter melts.
  2. Remove from the heat and allow to cool.
  3. Dissolve the yeast in the warm water placed in a small bowl. Set aside.
  4. Combine the eggs, sugar, and salt in a large mixing bowl, and mix until thoroughly blended. Gradually stir in the flour, alternating with milk and yeast mixtures. Gather the dough into a ball. Cover the bowl with a cloth, and let the dough rest 20 minutes.
  5. Pour the chicken broth into a large pot. Bring broth to a boil over medium-high heat.
  6. Meanwhile, sprinkle flour over a clean board or countertop. Turn the dough out onto the board and knead lightly until smooth and satiny, about 3 minutes.
  7. Add a little more flour if the dough is sticky.
  8. Roll out the dough to be about 1/2 inch thick. Use a butter knife to cut dough into 2 inch wide strips, and place strips into the boiling broth. Dumplings will initially sink, then rise to the surface when cooked, about 10 minutes.
  9. Remove dumplings from the broth with a slotted spoon, and drain on a plate.
